Key Lime and Coconut White Chocolate Scones

They say that friends are the family you choose for yourself.

When I started blogging, I never anticipated how much it would change my life. It’s given me drive, and confidence, and made me a part of the most supportive community, made up of people from all over the world.

Liz from That Skinny Chick Can Bake is just one of those people. She’s never far with a kind word at a time in my life when I have so needed it. I’m ever so grateful that I happened by her blog one day!

And I’m also happy to return the favor. Liz recently had the chance to go on the vacation of a lifetime and asked me if I could whip up something tasty in her absence.

With a hint of key lime and coconut, these scones are the perfect mental vacation for the rest of us left behind!

Besides, I’m on a mission to rid the world of hockey puck scones, one person at a time!

    Scones scare me . . .. I’ve never made them because I don’t want to contribute to the world’s hockey puck supply. But these look so light and fluffy, I just may have to leave my pull up my socks and make them, (And you’re right, Liz is a sweetheart, as you are.)

    It’s true how important my blogging friends have become. I never expected it when I started. Still am surprised by it. But it’s so true.

    I’m loving the new design, btw. Gorgeous. Love it as much as I love white chocolate and lime together. Putting those flavors together with coconut in scones is brilliant. I bet they make such an unexpected breakfast treat!

    I have missed seeing you. I am sure that your life is as crazy busy as mine and with the kids home for the summer it’s hard to find time to do much besides work and family.
