Since I’m totally the kind of girl who would pick a hotel based on the cookies they serve, it’s a real bummer I can’t afford to stay at the DoubleTree more often.
Their chocolate chip macadamia nut cookies are baked every day, and they’re warm and fresh when you check in. It’s like, hello, welcome to the Doubletree, have a little gift.
Only problem with these delectable little bites of goodness is that the official recipe is super top secret. What fun is that!?
So after much recipe testing, here’s my little gift to you on this Monday morning – a cookie so soft and sublime, it’s Just Like a DoubleTree Cookie.
¾ c. unsalted butter (1 ½ sticks), softened
½ c. +2 tbs. granulated sugar
½ c. + 2 tbs. packed light brown sugar
1 ½ tsp. vanilla extract
1 tsp. baking soda
½ tsp. salt
1¾ c. all-purpose flour
½ c. oats
1 ½ c. semi-sweet chocolate chips or chunks
¾ c. macadamia nuts, chopped
Preheat oven to 350 degrees F.
In a large mixing bowl, cream butter, granulated sugar and brown sugar together till light and fluffy, 2-3 minutes. Add egg and vanilla and blend until well combined. Mix in baking soda, salt and flour, being careful not to overmix.
Using a wooden spoon, stir in oats, chocolate chips, and macadamia nuts.
Drop by the rounded tablespoons onto baking sheets.
Cook 11-14 minutes until very light golden brown and edges are set. Cool on pan 2-3 minutes. Remove to cooling racks and cool completely before storing.
