Peanut Butter S’More Cookies

I want to start by saying thank you for all the prayers and well wishes that you were all so kind to leave for me last week.

I wish I had good news to share, but the doctor still has not called with the biopsy results. If I don’t hear back later today I may have to give up my whole not drinking Starbuck’s for Lent thing so I can heavily caffeinate myself!

All kidding aside, I’m hanging in there. I’m still a little wigged out by the whole thing, but there’s nothing to do but wait. I’m still trying to have an attitude of gratitude, but some moments that’s harder to do than others…

In the meantime, in an effort to distract myself, I made cookies. Lots and lots of cookies.

These cookies in fact…

I have a bit of an obsession with s’mores. Pretty much s’more anything.

I’d like to blame it on Girl Scouts. Once upon a time, I got roped into being a Girl Scout Leader. And the girls all nicknamed me S’more. Don’t ask me why – there’s really not a good reason.

It was only naturally that we looked for any and all excuses to eat s’mores. After all they’re kind of like a Girl Scout rite of passage.

I had no idea how much fun it would be to be a Girl Scout leader or how much I would come to love “my girls.”

These cookies are a great reminder of all the silly songs and laughs we had together!

Peanut Butter S’More Cookies
Yields: About 3 dozen

½ c. shortening
¾ c. creamy peanut butter
⅓ c. granulated sugar
⅓ c. light brown sugar
1 egg
2 tbs. milk
1 tsp. vanilla
1 c. all purpose flour
½ c. graham cracker crumbs
1 tsp. baking soda
½ tsp. salt
1 c. mini marshmallows
4 – 1.55 oz. Hershey bars, broken into chunks

Preheat oven to 375 degrees F.

In a large mixing bowl, beat shortening, peanut butter, granulated sugar and brown sugar until light and fluffy. Add egg, milk, and vanilla; beat well. Mix in flour, graham cracker crumbs, baking soda, and salt until well combined, but do not over mix.

Shape dough into 1” balls. Place on ungreased cookies sheets. Flatten slightly with the palm of your hand or the bottom of a glass.

Bake 6 minutes or until slightly set. Remove from the oven and add three mini marshmallows and three small chunks of Hershey Bar to each cookie. Return to the oven 3-4 more minutes until lightly browned.

Cool 1-2 minutes and then remove to wire racks and cool completely before storing in an airtight container.

    Isn’t being a Girl Scout leader the best?! I’m my daughter’s troop leader and we have a blast. Can’t wait for warmer weather so we can go camping! Speaking of perfect camping food, I’m dying over these cookies! They look amazing and so gooey. I can’t wait to try them out! :)

      It truly is! There were times it drove me crazy, but they were so sweet and so much fun. I wouldn’t trade all the craziness for even a moment of it!

    I remember s’mores from Girls Scouts, too. I just wish they sold door to door around here still.

      We got them door to door, but they don’t seem to be as good as they used to be. The cookies were smaller, drier, and harder than I ever remember them being. They’re sitting in the pantry largely untouched!

    Yum! These would definitely make my Monday MUCH better! They look sooo smore-riffic! :) I’m glad you’re hanging in there, it’s crazy how they make you wait after getting you all shook up! Have some dark chocolate, that way you can get some caffeine and indugle in a delicious treat. :)

    I missed your news too (blame a crazy past few days) but am sending up prayers for patience and good news. In the meantime, Starbucks and these cookies would definitely distract me! Adding Reese Cups to s’mores is one of my favorite parts of camping. PS: I definitely go to Starbucks when I’m stressed too. I love knowing that others do the same :)

    Jen…these cookies are gorgeous…..and I think I could use a plate of these myself lately! I love how the chocolates and marshmallows sit on top and are not all smooshed in!
