Pineapple Mango Salsa

I’m pretty sure I’ve already gained 5 pounds just thinking about all the food I’ll eat this holiday season.

Although, that might be from all the apple pie I ate for breakfast over Thanksgiving weekend…

With all the holiday parties and activities, it’s hard not to over-indulge. So in an effort to keep “lose 10 pounds” off my list of New Years’ Resolutions, when invited to a party I always offer to bring something.

That way I can be sure there will be at least one healthy thing at the party for me and especially my children to eat.

This Pineapple Mango Salsa is the perfect choice because it’s loaded with antioxidants, phytochemicals, and vitamin C.

Pineapple Mango Salsa

Yields: Approximately 3 cups

Ingredients

1 ½ c. tomatoes, seeded and diced small

1 c. pineapple, small dice

½ c. mango (papaya or guava), small dice

3 small cloves garlic, minced

1-2 jalapeños, seeded and finely diced (depending on how spicy you want it)

1 tbs. lime juice

1 tbs. cilantro, finely chopped

½-¾ tsp. salt

Multi-Grain Tostitos or Stacy’s Naked Pita Chips for dunking

Directions

In a medium bowl, combine tomatoes, pineapple, mango, garlic, jalapeños, lime juice, cilantro and ½ tsp. salt. Cover with plastic wrap and refrigerate 1-2 hours before serving.

Right before serving, give it a taste and adjust the seasoning if desired. The flavors will really blend together after it sits for awhile.

Serve with Tostitos or Pita Chips.

    This salsa looks fantastic! I hear you about fears of gaining weight. It’s not just the holiday season… it’s my blog too. I try to do some desserts and they are the ones that can hurt that scale. :) I had to laugh at your apple pie for breakfast… I’m sure we have all been there. :)

    My weight follows the barometer of whatever magazine I’m going through. If it’s Paula Deen or Food Network; I gain. Cooking Light (of course), Fine Cooking or Bon Appetit; I don’t. That being said, I think I need a batch of this since I am going through Food Network starting tomorrow!

    Wow! This looks amazing. I have a holiday party to go to next weekend and have been trying to think of something healthy to bring to balance out all the cookies, cheese balls and bread based appetizers that are sure to be there. I think I just found the perfect solution. Maybe I’ll make a double batch and keep one for myself!

    Delicious! I made something similar and served over pork…it was amazing and honey bunny and I discussed that the salsa would be tasty by itself with chips!
