Pumpkin Spice White Hot Chocolate

It has been a doozie of a week in our house!

It seems like every time my husband leaves on deployment, all the kids get sick and we turn into the plague house. So not cool!

As such, we’ve been sadly lacking in the whole yay it’s fall and almost Halloween enthusiasm. Instead of seeing it as one more day we’re all stuck around the house nursing colds, I’m going to see it as an opportunity to spend a little quality time together as a family, snuggled up watching a movie with a little popcorn and Pumpkin Spice White Hot Chocolate.

Cause if you’re not laughing, you’re crying…

Pumpkin Spice White Hot Chocolate
Yields: 4 servings

3 c. half and half, divided
3/4 c. Ghiradelli Classic White Chocolate Chips
3 tbs. pumpkin puree
½ tsp. pumpkin pie spice

Whipped Cream

1/2 c. whipping cream
1 – 2 tbs. confectioners’ sugar (depending on how sweet you like it)
Freshly grated nutmeg for dusting

In a medium saucepan, combine 3/4 c. half and half and the chocolate chips. Whisk together over low heat until the chocolate is melted and the mixture is smooth. Add remaining half and half, pumpkin puree, and pumpkin pie spice. Cook over medium until warm. DO NOT BOIL.

While it is heating, beat the whip cream in a chilled medium bowl until soft peaks form. Gradually blend in confectioners’ sugar.

Remove from heat, and serve. Top with a dollop of whipped cream and a little bit of freshly grated nutmeg.

    What a drink! After this one, you’d never want to taste the hot chocolate made out of those cocoa powders! White chocolate, hot and melted with cream, sounds so delicious!

    Oh how I love white hot chocolate! I love it even more than chocolate hot chocolate! There is something that’s just so soul satisfying and simply sweet about it. It’s the one thing I order from Starbucks when I’m not having a great day….it’s just so comforting. I love the idea of adding the pumpkin and pumpkin spices.     Get well soon! I was just thinking the other day about mixing some of my Godiva hot chocolate mix with some pumpkin. You beat me to it. Yours looks so great though I am definitely going to have to give it a try.

    The hot chocolate sounds wonderful! I swear every time one of my kids get sick the other gets sick and then I am always the last to get it. Like somehow I stay healthy to take care of everyone and nurse them back to health lol but then I’m sick like a dog still taking care of everything. I would want some of your hot cocoa if I was sick!     Yes, I do hate how sickness, once it arrives to your household, travels to all family members.
    This does seem like the perfect remedy though. Hot, spicy and chocolatey. Just the thought would brighten up an otherwise ho hum evening-yum! I hope everyone gets to feeling better.

    As a kid my mother always made hot cocoa from scratch. She would serve it to us scolding hot over mini marshmallows. It was always so hard to wait for it to cool before taking a sip! As an adult I’ve done the same for my family but I’ve been wanting an updated version to try. I’ll give this a shot real soon! Sounds so tasty!
