It has been a doozie of a week in our house!
It seems like every time my husband leaves on deployment, all the kids get sick and we turn into the plague house. So not cool!
As such, we’ve been sadly lacking in the whole yay it’s fall and almost Halloween enthusiasm. Instead of seeing it as one more day we’re all stuck around the house nursing colds, I’m going to see it as an opportunity to spend a little quality time together as a family, snuggled up watching a movie with a little popcorn and Pumpkin Spice White Hot Chocolate.
Cause if you’re not laughing, you’re crying…
Pumpkin Spice White Hot Chocolate
Yields: 4 servings
1/2 c. whipping cream
1 – 2 tbs. confectioners’ sugar (depending on how sweet you like it)
Freshly grated nutmeg for dusting
In a medium saucepan, combine 3/4 c. half and half and the chocolate chips. Whisk together over low heat until the chocolate is melted and the mixture is smooth. Add remaining half and half, pumpkin puree, and pumpkin pie spice. Cook over medium until warm. DO NOT BOIL.
While it is heating, beat the whip cream in a chilled medium bowl until soft peaks form. Gradually blend in confectioners’ sugar.
Remove from heat, and serve. Top with a dollop of whipped cream and a little bit of freshly grated nutmeg.
