In a moment of restraint the devil himself would have been proud of, I managed to resist the urge to buy one of the new Peanut Butter Snickers while I was at the store earlier.
Henceforth, we shall refer to this moment of rash stupidity as the moment I finally lost my mind!
I regretted my decision by the time I was leaving the parking lot, and this regret only deepened as the hours passed. I could have just gone back out and gotten one, but that would have meant putting my shoes back on, and well…I was just plain lazy.
Luckily I happened to have a bag of Snickers sitting in the cabinet, and with three kids you can bet your bottom I’ve always got peanut butter stashed away.
These might just be my new favorite cookie – the outside was soft and creamy, and the inside when still slightly warm was this ooey gooey delicious mess.
Peanut Butter Snickers Cookies
Yield: 2 dozen
1 c. sugar
2/3 c. creamy peanut butter
½ c. butter
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
¼ tsp. salt
24 bite sized Snickers
Preheat oven to 350 degrees. Line 2 baking sheets with silpats or parchment paper and set aside.
In a large mixing bowl, cream together sugar, peanut butter, and butter. Add eggs and vanilla and blend well. Mix in flour, baking soda and salt.
Form dough into 24 equal sized balls – about 1”. Flatten each ball and place a Snickers bar inside each one. Fold dough up around the Snickers, making sure the entire candy bar is covered. The ball will seem really big, but it will melt and flatten as it cooks.
Bake 9-11 minutes until set. Cool on sheet for 3-4 minutes; remove to cooling rack and cool slightly before eating. That chocolate and caramel inside will be really hot, so be careful with small children!
