When my husband and I first met (what we lovingly refer to as B.C. – before children) we always had a LONG work week. We were both in the Navy, and there were days when we had to be on base by 5:00 a.m. for PT. By the time we finished up, got home and had dinner, we rarely had energy left for anything else. So the weekends became the one time we could really lounge around – stay in our pajamas till late (or all day if we wanted) and catch up on everything we had neglected all week. We lived just down the street from this great little bagel place, and it became our Sunday morning ritual to head down there for bagels and orange juice. My husband would leisurely read the Sunday paper while I read whatever thing I’d dragged along. It was nice to just slow down and be together – even when we didn’t have anything to say.
Now, 13 years, 3 kids, a dog and 2 cats later, we’re still married! But we no longer live down the street from a cute little bagel place! In fact we don’t live near any bagel place. Nor do we have nice quiet Sunday mornings either…I decided it was time to revive the tradition. While it’s not quite the same, it is darn tasty, if I do say so myself! And the best part is you can make it ahead of time if you’re having company for the holidays and you want to serve a little something special for breakfast. It’s just as good on crackers as well if you want to serve it as an appetizer.
Scallion and Red Pepper Cream Cheese
8 oz. cream cheese, softened
3 scallions, white and green parts, thinly sliced
3 tbs. diced red bell pepper
1 1/2 tsp. dried parsley
3/4 tsp. garlic powder
Blend all the ingredients together in a small food processor or with a spoon.
